Yummy Food

I know this is starting to resemble a food blog, but bear with me, folks. Someone actually asked me for this recipe and forgot to give it to her, and it's amazingly simple and healthy and tasty. And I can't take credit for it - it's from the people who deliver my produce, New Roots Organics.

Sauteed Kale

1 apple (New Roots suggests a Granny Smith, but any yellow one will do too)
1/2 Large yellow or sweet onion, or a leek, diced
Olive Oil
1/2 teaspoon curry powder
1 lb kale, stems and ribs removed, leaves coarsely chopped
a few tablespoons water

peel, core and chop the apple. Heat the oil in a large pot or pan, and cook the onion until translucent. Add the apple and curry powder and cook until the apple is almost tender. Add the kale and water and cook covered, stirring occasionally until kale is tender and liquid is evaporated, about 5 minutes.

Potato, Leek and Corn Chowder

Butter
1 Leek, sliced, white and light green parts only
1 celery heart, chopped
2 or 3 yellow potatoes, diced
1 cup veggie stock
2 cups whole milk or cream
1/2 teaspoon thyme
1/2 cup frozen corn

Heat the butter in a large pot and cook the leeks and celery until slightly tender. Add the potatoes, veggie stock and thyme (and some of the milk if you need more liquid) and simmer until the potatoes are tender. Add the milk and corn and cook until warm. Season with salt and pepper.
